My daughter and I just returned from a week long camping/fishing trip. We took stored food items to eat on for the week. What we learned was that a pint jar of meat was too much for one meal for the two of us, or even two meals. I can meat in pint jars to feed 4 adults and 3 small children. Usually this is the right amount for one meal with few left-overs. If we are hosting a bigger crowd it is a simple matter to open two jars. However I will be moving soon as will her daughter and family. That will leave my daughter and myself each living alone. So, tonight I am canning chicken in half pint jars. I will also be canning beef in half pint jars in the near future. Gauge what size jar you can in by how much product will be consumed in one meal. In a grid down situation, refrigerating leftovers will not be the norm.
